Breakfast Muffins

For the person who doesn’t like eating too much in the morning but would like help managing blood sugar levels, balancing hormones and sustaining energy levels.

Breakfast is the most important meal of the day…well every meal is important because it is nourishing your beautiful body to keep you alive! I understand not everyone likes to eat in the morning however starting your day with multiple coffees on an empty stomach is a recipe for increased stress, blood sugar levels all over the place (which in turn leads to excessive snacking) which means your energy levels are on a rollercoaster all day! Not ideal.

These little muffins are the perfect little brekkie option that will give you some protein, carbs and fats to start your day right. With 4 different types of veggies they are also little fibre boosts for your gut microbes!

Feel free to add any veg you like to this recipe, especially baby spinach, mushrooms, kale, garlic or whatever you like.

Ingredients:

6 free range eggs

1 medium sweet potato

1 zucchini

1 tomato

1 red onion

2 tablespoons nutritional yeast

1/2 block of feta cheese

1 cup buckwheat flour

Method:

Chop the onion and fry on medium heat in extra virgin olive oil.

Grate the sweet potato & the zucchini and add to the fry pan to lightly sauté with the onion.

Add the nutritional yeast, then take off the heat completely and let cool.

Meanwhile, grease up your muffin tray with extra virgin olive oil.

Add the flour to the veggies mix.

Beat your eggs in a large bowl or a pouring jug.

Now, there are two ways I did the next part: the first, is if you prefer them to be like moist little muffins, the second is if you would prefer them to be like mini frittatas - either way tastes great, I personally preferred the first way, but experiment and see how you go!

Option 1: add the egg mixture to the pan, add the feta, stir in and divide into your muffin trays.

Option 2: add the veggie mix to your muffin trays, then sprinkle some feta on top and finally pour in some beaten egg mix.

Bake in the oven on 180 degrees for 15 minutes and voila!
